At Home sa Jollibee –Gratis Recipe!
While we were in Boston, MA last July we went to the Burger King branch on a lark. As you can imagine, there weren’t a lot of Filipino foods or Restaurants available in US or maybe we just doesn’t knew about it. We were so excited because we sense BK might have the taste of our own Yummy Burger from Jollibee but we all end up saddened. We could barely finish the burgers but “what the hell?”, we paid $3 for it (Hehehe). In short, we strained ourselves chomping the rest of the food. It wasn’t really that bad but It just didn’t really taste anywhere near what we remember back home.
Staying a month in US feels like we were already residing for a year. We surely missed our families, friends and of course, our own Filipino-Style Cuisine. I can smell the juicy of pinkish catsup-mayo special sauce mix of Jolly Burger back then. Oh God please help! (I love to eat… eat… eat… Pinoy-Cooked Foods, you could probably imagine how BIG I am, so don’t mention it! :D)
This can’t be! I have to make a JollyBurger on my own. So, I decided to rummage around the internet to look for its recipe but end up nothing.
Now, this time, I am using my influence and associates. I called my friend who works in Jollibee Philippines asking for the recipe, LOLS. Guess what? Whoallah! In addition from YumBurger recipe, he also includes the famous Original Crispy Chicken Recipe of Jollibee. I don’t know how he gets it but I truly don’t mind.
Here it goes:
Jollibee Hamburger ingredients:
1 -Pound ground angus beef
10 -Small hamburger buns
10 -Hamburger dill slices
10 -teaspoons dried, chopped onion
Hamburger Seasoning
Mustard, Ketchup ....and ..... waxed paper.
The Hamburger Seasoning:
1 Tablespoons salt
1 Tablespoons Accent (msg)
1 teaspoon ground black pepper
1/4 teaspoon onion powder
Mix all ingredients well in a spice shaker with big enough holes to allow pepper to flow. Makes about 3 ounces. (unless you're allergic to msg, then just use salt and pepper.)
The Beef Patties:
Divide 1 lb of beef into 10 equal sized balls. Form a patty out of each ball about 4 inches in diameter and1/4 inch thick. Do these on waxed paper. Now freeze the patties for at least an hour. (this keeps them from falling apart when you grill 'em). Obviously you'll do this in advance of "burger time". It is pretty tough to make patties this small, so if you come up with 9 patties, I'll forgive you.
The Onions:
Put the dried onions in a container, oh..like Tupperware...and add water. Water should be a few inches over the top of the onions. (better to have too much water than not enough) Cover, and refrigerate bout 1/2 hour. Drain the liquid, and BAM...you have Jollibee little baby onions.
The legendary Jollibee Crispy Chicken Recipe:
Before you cook the chicken it has to be marinated. The following Marinate recipe is still used today at Jollibee for the Crispy ChickenJoy which are marinated daily in 40 to 80 lbs at a time, however the amount of this marinade is only good for about 15 lbs of chicken.
The ChickenJoy Marinate:
1 tablespoons Kosher Salt
1 tablespoons MSG
1/8 teaspoon Garlic Powder
1/3 cup Bottled Chicken Concentrate
5 cups water
Mix all of the above and soak the chicken in the above marinate for 24 hours under refrigeration. The Original Recipe is not packaged in three different places. The way it is cooked and the process make it taste like it has eleven herbs and spices when in reality there is not. The way it is done in the restaurant is using dried eggs and milk in the flour along with a box of breading salt and the seasoning bag and a bag of breading flour.
Jollibee ORIGINAL RECIPE:
2 fryer chickens cut up into 8 pieces and marinated
6 cups Crisco Shortening
1 eggs well beaten
2 cups Milk
2 cups Flour
2 teaspoons ground pepper
1 tablespoons salt
1 teaspoon MSG
1/8 teaspoon Garlic Powder
1 dash paprika
Place shortening into the pressure cooker and heat over medium heat to the shortening reaches 400°F. In a small bowl, combine the egg and milk. In a separate bowl, combine the remaining six dry ingredients. Dip each piece of chicken into the milk until fully moistened. Roll the moistened chicken in the flour mixture until well coated. In groups of four or five, drop the covered chicken pieces into the shortening and lock the lid. When pressure start to builds up, cook for 10 minutes.

How'd you come across this man?it sounds authentic enough...im actually here in paris and i was scouring the net as well for jollibee chickenjoy recipes but i couldnt find any until this came along...Would jolibee acutally let go of their secret just like that?
ayway the gravy is pretty easy, its chicken stock, starch to thicken, (chicken cubes) thats it man..you can use butter as well...you'l figure it out.

Jollibee gravy is a secret daw. That gravy is a ready mixed powder already, then all the staff are going to do is to mix with water then boil.
However, I knew someone who makes a jollibee gravy taste-like. Here's the ingredients and procedure.
Ingredients
* 2 tablespoons butter or margarine
* 2 tablespoons all-purpose flour
* 1 (10 1/2-ounce) can chicken broth, undiluted
* 1/2 cup milk
* 1/8 teaspoon pepper
* breadcrumbs
Preparation
Melt butter in a large skillet over medium-high heat. Whisk in flour, and cook, whisking constantly, 1 minute. Whisk in broth and remaining ingredients. Cook over medium heat, whisking constantly, 2 minutes or until mixture thickens.

Beware of Jolibbe foods. They saturated with poisonous Monosodium Glutomate (MSG). Google "dangers Of MGS" and you we realize Jolibee and other fastfoods are piosonous kichenettes.

Tried the chickenjoy recipe. Substituted boullion cubes for chicken concentrate. Guess I added too much, way too salty. I also found that I couldn't pressure cook the chicken for 10 minutes, it was black and burnt if left that long. Used boneless skinless thighs, so that may have had something to do with it. Just thought if anyone was attempting they'd like to know.

just consider all the basic spaghetti sauce ingredients, change the the tomato sauce into Hunts tomato spag sauce mix with best food spag sauce.....
you'll taste like jollibee... just an experiment. (add vienna sausage, luncheon meat) ;)

you know what guys, i've worked in jollibee for a couple of months. they dip fry the chicken joy, they don't pressure fry it. if they did, the texture would be of a kfc chicken.
they don't use crisco. only a local brand that i forgot but it isn't criso. his recipe is very similar to a kfc recipe that i found in the net as well. even the explanations are similar and just rephrased. he just added garlic powder to that recipe

Maybe I never pay attention when Im eating but I have never noticed onions in my Jollibee burger nor any hint of dill flavor. The Mcdo burger uses onions and dill pickles.
Regarding the comments on MSG, I personally do not touch the stuff as it is one of my migraine triggers. It is as deadly to me as chocolates and excess sugar. However, to be fair, MSG is a type of glutamate or flavor enhancer (just like parmesan rind or dried mushrooms). I have yet to come across a scientfically based study on MSG and its effects. While European and American chefs shun the stuff (electing to use alternative glutamates as mentioned above), some Asian chefs do use it.

what i noticed in jollibee is that they deep fry the chix. You've mentioned to place a group of 4 or 5 chix in a pressure cooker and after it's done, that's it? How can it be crispy without deep frying it in an oil? Pls could enlighten me more? Thanks pre. God Bless!

MSG was recently featured in tfc as better than salt. Yes, accordingly there was one american who originally made a statement that it is not good for the body. but they made a study and found out that di pala totoo what that guy campaigned for who never made a clinical study. Dito sa u.s. ang salt ay talagang no no so they have other alternative na blend of soices kuno.
By the way, di naman pini pressure cook ang jollibee. Nakikita nyo naman when you go how they cook it. a typical deep fryer lang na may timer. dapat babad sa mantika para walang dugo na lalabas at mangitim. Also, Cisco is just a brand of oil, meaning maski ano basta mantika. I prefer Canola oil kasi no cholesterol daw. any brand ha! yung kosher, i'll try to buy and taste it if lasang asin din lang...will post again ..bye

I work in Jollibee before as a trainor..i agree with ur recipe smell and taste like chicken joy.
Its true that garlic base lang naman ang chicken..but on the cooking procedure..we'l use a kentucky deepfryer instead of pressure cooker. KFC intead.Jollibee is using lots of msg as flavor inhancer..but they are using batter mix to moisten the chicken before coating with flour... drumstick and wings, cooked for 12 minutes..other body parts 8 mins.
Use vegestable oil intead of coconut oil...mc cormick chicken gravy...hehehe.sarap jollibee....

here is it:
KFC Gravy Recipe
* 1 1/2 tablespoons Butter shortening, melted
* 3 tablespoons of original breading flour
* 2 tablespoons all-purpose flour
* 1 can campbell condensed chicken stock
* 1 can water
Directions:
1. Make a roux with the melted shortening and 1 1/2 tablespoon of flour
2. Cook this over low heat for 10 to 15 minutes or until the roux browns in color to resemble a nice milk chocolate color.
3. Once the mixture turns brown remove it from the heat and add the remaining flour stiring to make a paste.
4. Slowly add the liquids whisking together the paste and liquid.
5. Bring the mixture to a boil and boil for 2 minutes reduce the heat and allow the mixture to thicken which should take about 3 to 5 minutes. Stiring constantaly. Mixture will burn if left unattended.

sa unang tikim ko pa lng ng gravy ng jollibee i found it a very simple recipe.but im not so sure,iba-iba kase panlasa ng tao.for me its so simple.well try nyo na lng to na recipe.
ingredients:

kung itoy kumokulo na(tiny bubbles)agad e lagay ang mushroom.maghintay na naman ng ilang minuto.kung sa tingin nyo luto na ang mushroom.e lagay na agad yung cornstarch (diluted by water)tapos salt and pepper to taste.hintayin hanggang sa itoy mag thick.

may ishashare din ako: here are the things you will need if you want to make
"cheesy bacon mushroom"
1/4 dairy creme butter
1/2 tetra pack of nestle all purpose creme
1 eden cheese
bacon & cheese powder (yung nilalagay sa pop corn)
of course, mushrooms (slice)
in a bowl, melt the butter and creme then mix the bacon and cheese powder. after that grate the eden cheese on it. put the mixture in a sauce pan and cook in low heat until it blend smoothly, add the mushrooms.
and so you have your cheesy formula to incorporate with the jollibee hamburger above.
